The scotch fillet is found on the back of the animal and runs from the strip loin to the chuck. It is a support muscle and is not subjected to the heavy work load of moving the animal around, therefore the scotch fillet are very tender.
Scotch fillet is best cooked with fast heat such as pan frying or BBQing
