Sirloin is the piece of beef betweeen the rump and the ribs. Coming from the back of the animal, the muscles do less work adding to the tenderness and flavour. The sirloin is the large portion of the tradiational T-Bone steak when boned out.

Sirloin steak is best pan fired or BBQed, being one of the prime steak cuts.
